How diets affect human health and environmental sustainability
Abstract
dc:description.abstractDietary patterns are shifting to include more calories, processed foods, and animal products as populations become more affluent and urbanized. These dietary transitions have driven increases in diet-related diseases and environmental impacts. My thesis explores these links between diets, human health, and the environment – the diet-health-environment trilemma – and discusses and discusses what can be done to reduce the future impact that humanity’s dietary choices are projected to have on human and environmental health.
