Ampliação de uma indústria de sorvetes: inserção de uma linha de produção de gelados comestíveis hiperprotéico

Ice cream is a very popular product that appeals to all age groups, presenting an expressive market in several countries such as Brazil, France, the United States and Canada. Currently in the Brazilian market we have a great variety of types and flavors of ice creams that serve the most varied consumer public. Because it is a food that traditionally has a high amount of fats and carbohydrates, people who aim at a better quality of life, such as athletes and physical activity practitioners, avoid ingesting such a product. Although the most diverse types of functional foods for this very demanding audience are easily found, it is still quite difficult to find edible ice creams on the market. In this work, two formulations of edible ice creams with high protein value of animal and vegetable source were elaborated, each nutritional labeling being elaborated and cost studies necessary for the insertion of two production lines of the products developed in an ice cream industry. The two formulations showed protein values consistent with what is determined by legislation for hyperprotein food, consuming 2 servings of 60 g of the ice cream will have already reached the daily protein intake indicated for athletes.
