FATSOLUBLE VITAMINS IN BLACK SEA AND FRESHWATER FISH//МАСТНОРАЗТВОРИМИ ВИТАМИНИ В ЧЕРНОМОРСКИ И СЛАДКОВОДНИ РИБИ
Abstract
dc:description[EN] The objectives of the work were to investigate the fat soluble vitamins (A, E and D3) content and their percentige of recommended daily intake (RDI) of ten Black Sea (bonito, bluefish, goby, garfish, grey mullet, sprat, horse mackerel, red mullet, shad, and turbot) and five fresh water (common carp, bighead carp, grass carp, catfish and trout) commercially important fish species. Significant seasonal changes of fat soluble vitamin’s composition of the six Black Sea (goby, horse mackerel, red mullet, sprat, shad and turbot) and three freshwater fish (common carp, bighead carp, grass carp) were observed. This work also present an evaluation of the effect of steaming process on fat soluble vitamin contents in one of the analyzed freshwater fishes (freshwater trout) and three marine fishes (bluefish, shad and horse mackerel). A comparison of two group’s vitamin contents shown an extensive variability of data between species. Results showed that most of the fish species were characterized as good source of fat soluble vitamins, especially vitamin D3. Vitamin A and vitamin E levels have been affectes after steaming while cholecalciferol concentration stayed unchanged during the process.
