However, the major detectable hydrolytic product by single Lactobacillus spp. evaluated in our study was nitrile, instead of isothiocyanate. This caused by decreased pH in media, known to favor nitrile formation, since microbiota in buffer did not alter this. The technical limitation of in vitro incubation studies may be that bacteria are sensitive to environmental changes not seen in vivo. Using in situ exposure to overcome this, we were able to directly monitor the hydrolysis of GRP, since the change for microbiota is the minimal.
