Thus, in order to observe the effect of treatment on total soluble sugars, the difference between total soluble sugar for treatment and control should be greater than 1.74% w/v. From the difference of the LSMEANS of treatments for total soluble sugar with control, it was observed that not until 12 hr after the start of fermentation was there a difference of more than 1.74% w/v. Thus, observing the effect of organic acids on total soluble sugar would have limited use because earlier detection is desired.
