One hundred and eighteen of the 220 facilities surveyed participated. Of those participating, 59 facilities (50%) returned the surveys only, and 59 facilities (50%) sent menus with their completed surveys. The average size of these facilities was 31-70 clients, and almost all had a nutrition consultant that is a Registered, Licensed Dietitian. Lunch was the most common meal served, followed by breakfast. Snacks were most commonly served in the afternoon, or at 10 a.m. and 2 p.m. for the diabetic clients.
