This process may take place in the presence of an enzyme or via an autoxidative pathway. The 13-hydroperoxide of linoleic acid will be synthesized using soybean lipoxygenase following published literature procedures. The synthesis and spectroscopic characterization of the 13-hydroperoxide of linoleic acid will be presented. Decomposition of a lipid hydroperoxide leads to many secondary products. Catalytic decomposition of lipid hydroperoxides has been extensively studied with iron, but the study of this decomposition with copper has only recently begun to be studied. Analysis of the reaction progress by high pressure liquid chromatography indicates a loss of lipid hydroperoxide and an increase of decomposition products. Spectral data for the ultra-violet active decomposition components have been collected. These results are compared to the latest published research findings.","abstract_html":"Lipid oxidation involves the reaction of an unsaturated lipid with oxygen to form a lipid hydroperoxide.
