Efeito do consumo de iogurte caprino probiótico no perfil bioquímico e histopatológico de ratos

dc:description.abstractGoat milk is considered a complete food because of its nutritional value, with better digestibility and therapeutic and dietary characteristics which makes it important for human nutrition. Its benefits can be further enhanced through the use of milk as a vehicle for the development of probiotics. Yogurt is known for its therapeutic, nutritional and sensory properties. The goat milk yoghurt is a matrix suitable for inclusion of ingredients such as honey, which is an important food not only for its nutritional properties, but also by their functional and biological properties are mainly attributed to the presence of phenolic compounds and flavonoids. Inflammatory Bowel Disease (IBD) comprises Crohn's disease (CD) and Ulcerative Colitis (UC) which refers to a chronic disease of the digestive tract, characterized by recurrent, spontaneous chronic inflammation. The UC affects the mucosa and submucosa of the colon and rectum. The cause seems to be related probably to a combination of genetic and environmental factors. The objective of this study was to evaluate the effect of probiotic yogurt goat added Lactobacillus acidophilus and honey in rats with experimental colitis, the biochemical and histopathological profile, and its possible antiinflammatory activity. The animals were divided into 6 groups (n = 10) received the yogurt for 14 days. After this period, colitis with acetic acid (0.5 mL of 10% v / v in 0.9% saline) was induced remaining treatment for 24 hours. A decrease was observed in the macroscopic damage score (p <0.01) in the groups receiving the goat yogurt, with no changes in HDL and blood glucose between the groups. Regarding Triglycerides and Total Cholesterol, was not observed variation among groups. It was concluded that the added goat yogurt honey made possible preventive effect on experimental model of colitis induced by acetic acid, reducing the score macroscopic damage in the treated groups. Like yogurt, goat milk also promoted similar effect, with improvement in the macroscopic damage and the histological lesions, reduced leukocyte infiltration and preservation of tissue architecture of the organ, resulting in the preservation of the epithelium.
