The experiment was conducted at the experimental station of the São João do Cariri, where were used 21 castrated goats, with an average initial weight of 15 kg ± 1.0 kg, randomly assigned to individual pens. The experimental design was a completely randomized design (CRD). Were formed seven groups, each with three animals representing the levels of feed restriction 0, 20 and 40%. The animals weight was measured weekly from the beginning of the experiment. The goats were confined for approximately 110 days, when they were destined for slaughter. Measured the temperature and pH 0h, then, the carcasses were placed in a freezer. With exception of the total weight of muscles, Biceps femoris, Semimembranosus, Semitendinosus, Quadriceps femoris and pelvic fat, the animals subjected to feed restriction 20% were similar to those fed ad libitum. The temperature and the pH of the physical parameters did not differ between the levels of feed restriction. The chemical composition of the meat was not different between levels 0 and 20%. When comparing the muscles, it was observed that the color parameters, the percentage of proteins, ether extract and ash were higher in the Longissimus dorsi muscle. Between the Longissimus dorsi and Semimembranosus, the ash is negatively correlated with the lightness (L *). The feed restriction of 20% not affect the performance of the muscles nor the physical and chemical characteristics. The Longissimus dorsi has better physical and chemical quality.
