Desafios para melhoria da qualidade do leite frente às instruções normativas 51 e 62
Abstract
dc:description.abstractThe improvement of the raw milk quality and the development of the milk chain in Brazil is a great challenge not only for producers, but for all sectors involved in the dairy industry. The publication of the Normative 51 in 2002 has established the identity and quality of milk in the country, and has stipulated deadlines in order that the raw milk quality indicators (total bacterial count and somatic cell count) were achieved. When the deadline ended for the South, Southeast and Midwest, the Sector Chamber for the milk production chain and Embrapa Dairy Cattle sent to the Ministry of Agriculture, Livestock and Supply a technical report proposing a new timetable and new guidelines in order to achievethe proposed limits, so that the IN 51 was replaced by the IN 62. Thus, it is expected that up to 2016 for the South, Southeast and Midwest, and by 2017 for the North and Northeastern regions, the raw milk produced in Brazil reaches the expected quality level, ensuring this way, safe products and in a high quality for consumers, reducing the economic losses regarding the sector of quality problems, making the Brazilian milk internationally competitive. The present study proposes a critical approach concerning the national dairy industry challenges, the adequacy of the technical qualifications required by the legislation.
