Avaliação da qualidade do leite cru produzido no município de Areia- PB

The objective of this study was to evaluate the physicochemical composition and the microbiological quality of cow's milk, in order to increase milk production and improve milk quality. The experiment was divided into two parts, one of which was the follow - up of milking and collection of milk tank samples from nine properties located in the micro - region of the Paraiba swamp, in the city of Areia - Paraíba. The other part was the evaluation of the physical-chemical and microbiological quality of the collected milk samples, both performed at the Federal University of Paraíba, at May to December 2016. The animals chosen for this study had different ages and stages of lactation and All mestizos. All were fed to pasture, and some properties were mechanically milking and hand milking. The physical-chemical analysis was performed using the Ekomilk ultrasonic device, generating data on fat, protein, lactose, non-greasy solids, total solids and density. Total bacterial count (CBT) integrated the microbiological analysis and additionally the somatic cell count (CCS) was performed. In general, the milk samples had physicalchemical characteristics not recommended by IN n. 62, suggesting failures in animal feeding management. Five properties (55.5%) presented CCS and CBT within the limits established by IN n. 62 possiblely beacuse the presence of sublinal mastitis and unsatisfactory hygienic practices during milking. It is necessary to implement corrective measures in the properties studied in order to improve the quality of milk produced in the region.
