  1. Effect of Ph Manipulation During Aqueous Extraction of Peanut Proteins

In general, heating at 60(DEGREES)C for 30 minutes increases protein solubility. However, heating the pH 6 extract caused the pH to shift toward the isoelectric region, and lowered about 40% of its solubility as measured by absorbance at 280nm.

  2. Biochemical and Rheological Characterization of Peanut Proteins Crosslinked with Microbial Transglutaminase

Initially, the rheological behaviors of aqueous peanut flour dispersions were characterized across a range of conditions, including controlled heating and cooling rates under both large and small-strain deformations. Fat content influenced the rheological patterns, as dispersions of higher fat …

… biomarker, and Ara h 1, one of the principle peanut proteins responsible for allergic reactions. PC-based sensing was completed with a Protein A-immunoglobulin G interaction with a .009 nm accuracy. All of these demonstrations were completed at physiologically-relevant concentrations, and as …

  4. Evaluation of γ-Irradiated Peanut Extract as a Proper Immunogen for Immunotherapy in Murine Model of Peanut Allergy

BACKGROUND AND OBJECTIVES: Peanut allergy is one of the most serious forms of IgE-mediated food hypersensitivity, and gamma irradiation has been applied widely for the preservation of food. Previous studies indicated that the capacity of IgE to binds to ovalbumin (OVA) and ovamucoid (OM) was …
