Estudio de la ingesta dietética de fluoruro en la población canaria

Abstract

Fluoride is the most electronegative element of the periodic table, which gives it great chemical reactivity, as well as physiological properties of the most importance for human health. Despite the benefit of protection against dental caries, the possibility of opacity and discoloration of tooth enamel has also been observed, along with a disfigurement of the teeth in people who come from areas where the amount of fluoride in the water is high. Therefore, it is important to carry out a nutritional and toxicological evaluation, based on the percentages of contribution to the Recommended Daily Intake (RDI) and Admissible Daily Intake (ADI) stipulated. It has been observed that the concentration of fluoride in food depends on it origin. In the Canarian adult population, according to their eating habits, the Estimated Daily Intake (IDE) of fluoride does not exceed the ADI, so there is no toxic risk. Likewise, the IDR is completed, so the contribution of this ion is nutritionally adequate.
