The drying unit is the final operation in the production of raw sugar which involves the removal of moisture from the sugar crystals after centrifugation varies according to the product properties of air as it is and the air contact with the product. The heat transfer occurs by the temperature difference of the product contact with the air , therefore, the mass transfer occurs by the difference in partial pressure of water vapor existing between the contact surface and air . The moisture present in the sugar crystals can be internal , occluded free and this should be completely removed to maintain the quality of the final product during storage. From the survey data Cooler rotary drum dryer BSH - Codistil cooler and dryer Fluidized Bed Piratininga Usina Monte Alegre present in the drying system was evaluated through the respective balances of mass and energy , showing the greater efficiency and better quality sugar Dryer Fluidized Bed Cooler Piratininga.
